Granola


8 c. oats
1/2 c. honey
1/2 c. coconut oil
1 c. chopped peanuts (or any other nut- we have a tree nut allergy so we use peanuts)
1 c. unsweetened coconut
1/4 c. ground flaxseed
1 tbsp of cinnamon and nutmeg

Heat honey and oil in a pot on the stove top in order to whisk them together. Mix the rest of the ingredients and then pour oil mixture over dry ingredients. Grease two cookie sheets and spread granola mixture on them. Press down and bake at 300 degrees for about 45 minutes or until golden.

Black Bean Soup


Ingredients:
2 cans of black beans
1 can of chicken broth
1 onion, chopped
3 pieces of bacon, chopped
1 clove of garlic
1 tablespoon of worcestershire sauce
1 tablespoon of ketchup

Directions:
Put the bacon in the pot first for a few minutes. Then add onions and garlic. Cook until onion is soft.
Add ketchup and worcestershire sauce. Then add two cans of black beans and can of chicken broth.
Cook until soup boils, then cool a bit. Blend half of the soup in a blender and then put back in soup pot.

Lasagna




Ingredients:
a box of lasagna noodles
2 jars of tomato sauce
1 large container of cottage cheese
1 pound of ground beef or italian sausage
2 bags of shredded mozzarella cheese

Directions:
1. Cook the meat in a skillet.
2. Spread a layer of tomato sauce in the bottom of a 9x13 dish.
3. Put the noodles down going long ways.
4. Spread a layer of cottage cheese over the noodles.
5. Put a layer of meat next, then put tomato sauce over that.
6. Sprinkle the cheese next.
7. Repeat layers except this time the noodles go short ways.
8. The last layer is noodles going long ways, then sauce and cheese only.
9. Cover with foil and bake at 350 degrees for one hour or until the noodles are soft.

Smoothies

Ingredients:
1 Banana
a handful of spinach or kale
1/2 cup Greek yogurt
1/2 orange juice
1 cup of frozen berries
1 tablespoon ground flaxseed

Directions: Put ingredients into blender and mix. Enjoy!
